The Challenge: Planning a comprehensive food service program for the 200,000 square ft. Performing Arts Center

The Solution: Six years prior to the scheduled 2019 opening, the founders retained my services to coordinate with architects David Rockwell & Liz Diller to develop an innovative & strategic floor plan. We prepared a 5-year food & beverage revenue & net income forecast. In addition, we formulated the RFP for prospective 3rd party operators, assisted the executive committee in the selection process, & negotiated a letter of intent.

The Jacob Javits Center Expansion

Success: Leadership made wise financial business decisions for 1.2 sq. ft. building expansion project. Secured a partnership with an innovative food service provider enhancing the overall guest experience & contribution to financial growth.

The Challenge: The Javits Center is the largest convention Center in the United States.  In order to manage future demand, assisted the executive team a with 1.5-billion-dollar expansion budget was approved to create a new building adding exhibition space, a conference center & event spaces with rooftop farm. Assisted the executive team throughout the process.

The Solution: Work with key leadership to analyze the expansion physical plant, assist in the RFP development and evaluation process to determine the best food service partner for the operation. The new building is scheduled to open in Spring of 2021.

Tribeca Rooftop NYC

Success: 21% growth in a 2 year period

The Challenge: The revenues of a prominent NYC event venue had plateaued for the past 5 years. How to increase sales & profitability for an already successful business that is losing momentum.

The Solution: We created a new marketing plan & refreshed the overall sales strategy. We developed a leadership mentor program with the existing seasoned sales team. As a result of the targeted approach, the entity experienced 21% growth in a 2-year period.

Simone Development

Success: Accurate market assessment, revenue forecast & ROI analysis for an effective decision.

The Challenge: A New York based real estate group is developing a hotel property in a new region. Determining the market feasibility for ROI based on constructing a full-service conference center. 

The Solution: We completed an extensive competitive analysis, developed the revenue forecast for the new hotel & presented to the executive team.

Sonnier and Castle

Success: Implementation of comprehensive sustainability practices resulting in long-term ecological & financial savings.

The Challenge: To develop effective protocols & raise employee awareness within the organization without compromising profitability.

The Solution: The management team constructed an elaborate rooftop vegetable garden resulting in reduced waste, efficient practices & freshly grown produce. The garden was the cornerstone to formulate sustainable systems throughout the organization. This included composting, cleaning practices minimizing chemical use, recycling procedures & energy efficient appliance purchases.

Restaurant Associates

Success: An established parent company providing the necessary support to each of its newly acquired organizations.

The Challenge: This national food service company has acquired three companies in Boston, Washington DC and upstate NY to expand their catering division. How to integrate these three distinct brands utilizing the effective systems & strength of the organization. 

The Solution:  A series of 1 on 1 visits/meetings with the ownership & executive committees of each company to understand the individual brands & potential areas of support. Based on site inspections, we developed & facilitated a 2-day joint symposium.  The emphasis was focused on team building & integrating best practices from each organization. This resulted in the parent company providing the necessary support for success.

Success: Fast tracked revenue growth & increased net income for a boutique brand.

The Challenge: A new artisinal product line has been developed. How to grow revenues for this new division & introduce the products to the marketplace.

The Solution: We developed an overall marketing strategy including rebranding the website with an accelerating  social media campaign. We facilitated market influencer presentations resulting in outstanding expectations for first & second quarter growth.

NY Junior League/Astor House

Success: A strong external partnership program and financial turnaround of an existing division.

The Challenge: This iconic organization is located in a beautifully designed townhouse on the upper east side of Manhattan. The present food service program has proven unsuccessful resulting in decreased revenues & negative cash flow.

The Solution: We implemented an external, partnership-based program, secured new sales leadership and refurbished the existing spaces for special events. The result: a financial reversal & reset of the division.
